No cases of the Mondays here—Senior Editor Jenn Chen made a super enviable lunch of the luscious beet burger from our July+August issue, slathered with horseradish Vegenaise, sprinkled with cilantro, and accompanied by a side kale salad with shredded beets, mushrooms, avocado, and seaweed. Uh oh, I feel a pun coming on… this meal can’t be beet!

There’s not much we like more than the black bean, cashew cheese, and veggie torta from Gracias Madre. Well, perhaps not as much as its house-made totopos topped with chipotle salsa verde, cashew crema, and cilantro. It’s a toss-up, really.
